Pull-A-Part Bread

Easiest and most delicious breakfast/brunch item. Also doubles as dessert when you have leftovers and can't resist one more bite!

Pull-A-Part Bread
3 cans flaky style biscuits, cubed into bite sized pieces
1/4 cup brown sugar
1 cup sugar
1 stick melted butter

Mix sugars, cinnamon in large pie pan or medium bowl. Roll cubed biscuits in sugar mix then place in bundt pan. Cover with melted butter. Bake at 350 degrees for 30 minutes. Flip onto large plate or platter to cool.

1 box confectioner's sugar
3-5 Tblsp milk (may need more or less than this estimate)
1/4 tsp almond or vanilla extract

In a separate small bowl, mix powdered sugar with several tablespoons of milk, slowly add one at a time until reaching the desired consistency. Add small splash of either vanilla or almond extract. Pour over bread after cooling slightly. Serve while warm.

We had the very best time in Birmingham this past weekend! We successfully chose THE dress. I was so blessed to have JBN, NAN, and SRK with me throughout the marathon Saturday. I am so thankful they were with me and for their patience and support! We started off the day with a beautiful breakfast of pull-apart bread (recipe to follow) and cheese grits along with a mimosa (for courage)! I could not be more excited!!

Antiquing in Oxford

Several weeks ago I spent the day between two antique stores in Oxford: The Mustard Seed Antique Emporium and Sugar Magnolia Antique Mall. There were so many neat finds! Here are some I came across and loved:

This wooden base lamp was a great size and shape.

This chair had been beautifully recovered.

Beef with Snow Peas

WJW made this Pioneer Woman recipe a few weeks ago. It was easy, quick, and delish.

Beef with Snow Peas:
via The Pioneer Woman

1-1/2 pound flank steak, trimmed of fat and sliced very thin against the grain
1/2 cup low sodium soy sauce (definitely use low-sodium)
3 Tablespoons sherry or cooking sherry (we used cooking sherry)
2 Tablespoons brown sugar
2 Tablespoons cornstarch
1 Tablespoon minced fresh ginger (peel then mince)
8 ounces, weight fresh snow peas, ends trimmed
5 whole scallions, cut into half-inch pieces on the diagonal (we cut them inch-long)
Salt as needed (we didn't need any)
3 Tablespoons peanut or olive oil (we used olive oil)
Crushed red pepper, for sprinkling
Jasmine Rice, cooked according to package

In a bowl, mix together soy sauce, sherry, brown sugar, cornstarch, and ginger. Add sliced meat to bowl and toss with hands. Set aside.
Heat oil in a heavy skillet (iron is best) or wok over high heat. Add snow peas and stir for 45 seconds. Remove to a separate plate. Set aside.
Allow pan to get very hot again. With tongs, add half the meat mixture, leaving most of the marinade still in the bowl. Add half the scallions. Spread out meat as you add it to pan, but do not stir for a good minute. (You want the meat to get as brown as possible in as short amount a time as possible.) Turn meat to the other side and cook for another 30 seconds. Remove to a clean plate.
Repeat with other half of meat, allowing pan to get very hot again first. After turning it, add the first plateful of meat, the rest of the marinade, and the snow peas. Stir over high heat for 30 seconds, then turn off heat. Check seasonings and add salt only if it needs it. Mixture will thicken as it sits.
Serve immediately over rice. Sprinkle crushed red pepper over the top to give it some spice.

Notes: We doubled the meat and marinade. We added broccoli for extra veg which was a good move. We used a wok to cook. Because we had so much more, we had to do several rounds of cooking. We kept everything warm in a low-heat oven. Be sure and keep the pan screaming hot. To do so, you may have to clean the wok while you cook. We served it with jasmine rice and green salad. It was even better leftover.

Gourmet Fettuccine:
4 tablespoons butter
1/4 cup EVOO
1 tablespoon AP flour
1 drained 14 ounce can artichoke hearts
3/4 cup prosciutto, cut into thin strips
1/2 cup parmesan cheese
1 cup chicken broth
2 tsp fresh lemon juice
1 teaspoon paprika
salt and pepper to taste
1/4 cup fresh chopped parsley
8-10 ounces fettuccine cooked and drained

Saute prosciutto non-stick pan. Set aside. Melt butter in large pan. Add EVOO and flour. Cook for 3 minutes, stirring well. Add remainder ingredients except pasta. Cook on low heat until well combined. Add pasta and stir. Serve topped with extra grated parmesan.

Super easy. Warm and delish. Great as a side or as a main plate paired with a large green salad and crusty bread. You could also add chicken for a heartier plate. Thanks, LMW for yet another well-loved recipe!

Chicken Piccata

WJW and I have made chicken piccata twice in the past few weeks. It is sort of a process! Once you've pounded the chicken into cutlets and dredge them, it's actually a quick meal.

1 lb linguine
4 tablespoons olive oil
salt and pepper
3 tablespoons fresh chopped parsley
1/4 cup grated parmesan
Cook pasta according to package directions. Add remaining ingredients stirring to combine. Cover to keep warm.

3 tablespoons fresh chopped parsley
4 boneless, skinless chicken breasts, pounded thinly (use either a tenderizer or small pan)
flour, salt and pepper for dredging
EVOO
Brown chicken on both sides in EVOO. Remove from pan and set aside. The chicken will finish cooking in sauce later.

1 cup chicken stock
1 cup white wine
juice of 2 lemons
3 tablespoons fresh chopped parsley
2 tsp brined capers (drained)
1 tablespoon butter
salt and pepper to taste

Using the same pan, de-glaze with stock stirring to break up browned bits. Add lemon juice, salt, pepper. Add wine, butter, capers, parsley. Sauce should reduce and thicken. Add chicken back to pan and cover until cooked through. Serve chicken and sauce over pasta. Top with extra parsley and parmesan cheese. You will definitely want a side warm crusty bread! Great with a simple green salad with homemade vinaigrette. PS: This recipe is from memory...don't hold me to it.

Sarah's Key is a captivating historical fiction novel. I literally read it in one night. The story follows the investigation of the Vel' d' Hiv, the roundup of French Jews during the Holocaust. There is a dual narration throughout most of the book: Sarah, a Jewish girl affected by the Vel'd'Hiv and Julia, the ex-pat reporter living in France. Definitely a compelling, quick read!

Pumpkin Pecan Bread

I made this last week for game-day company. Sadly, Ole Miss couldn't beat Bama. The pumpkin bread, however, was a winner! I've had this recipe for a while, but have never made it. I ended up improvising on the spices and it worked out beautifully. This is the perfect season for warm pumpkin bread and a cup of coffee. We served it with cream cheese.

Pumpkin Pecan Bread
1 2/3 cup all-purpose flour
1 tsp baking soda
1/4 tsp baking powder
3/4 tsp salt
1/2 tsp nutmeg
1/2 tsp cinnamon
1 1/2 cup sugar
1/2 cup vegetable oil
2 eggs
1/2 tsp vanilla extract
1 cup canned pumpkin
1 cup chopped pecans

In a large bowl, combine dry ingredients. In a mixer, beat together sugar and oil. Add eggs, pumpkin, and extract. Slowly add dry ingredients. Stir in pecans. Bake for 1 hour at 350 degrees in a greased and floured loaf pan.

I read this book a few months ago. I am still thinking about it. It is a haunting depiction of the role terrorism plays in a family affected by an attack. The characterization of the anonymous protagonist is achingly heartfelt. She is full of grief and passion. As with Little Bee, I am again impressed with Cleave and his ability to connect to women both as characters and readers.

Greek Beer Burgers, revisited

I'm certain I have posted a recipe for Greek beer burgers sometime before. I improvised on them last night, and ended up with an improved recipe. Who wants to go to the Greek Isles with me?
Greek Beer Burgers:
1 lb ground beef
1/2 tsp garlic salt (all measurements are approximate, season to taste)
1/2 tsp Cavender's
1/4 tsp Seasoned Salt
1/4 tsp Lemon Pepper
3 shakes Worcestershire sauce
6 oz crumbled feta
6 oz cold beer ( I used Blue Moon Pumpkin Harvest, delish)
Mix all ingredients using clean hands in a large bowl. Score into 4 sections and pat out gently into burgers. Heat large skillet with olive oil to medium high heat. Brown both sides of burger then cover and reduce to medium-low heat until cooked through. Serve with or without a bun, topped with caramelized onions. Great with sweet potato fries or atop a large green salad. They would also be great on the grill. And I bet if you came up with a side of homemade tzatziki sauce that would be extra-delish.

Pantry Pasta

It rained for two straight days Labor Day weekend. It was sort of perfect timing because I was not feeling too great. So I had a great excuse to stay inside on the couch making a huge dent in my DVR. I was hungry and chilly but did not want to get out in the rain for a grocery run. I made this pasta dish from my pantry. Delish. And even better leftover.
Pantry Pasta:
1/2 package frozen leaf spinach, cooked and drained according to package directions
10 grape tomatoes, halved
1/4 lb angel hair pasta, cooked and drained reserving 3 tsp pasta water
1/4 cup EVOO
2 cloves fresh garlic, minced
sprinkle of red pepper flakes
3-4 roasted chicken tenderloins, shredded or diced in bite-sized pieces
salt and pepper
romano and parmesan cheeses

In a large skillet heat EVOO over medium heat. Add garlic, cooking until fragrant. Remove garlic (or most of it, this is sort of difficult in my opinion). Add red pepper flakes. Add tomatoes and toss. Cook for 1 minute. Toss pasta, reserved pasta water, chicken, spinach, salt and pepper. Top with cheeses. Makes 1-2 servings.

To roast chicken tenderloins: toss with EVOO, season with garlic salt and pepper, roast at 350 degrees for 18-20 minutes or until done.

Randy Susan Meyers depicts the story of two sisters, Lulu and Merry, clinging together throughout life following the death of their mother at the hands of their father. I loved it.

10 years ago yesterday I was sitting among my classmates in AP U.S. Government when we heard the school-wide announcement there had been an attack on the World Trade Center in New York. I am proud and blessed to live in the United States of America. I am honored to be protected by those who serve in the military. I am grateful for all those who gave tirelessly in the months following the attacks: firefighters, search dogs, policemen, health care providers, clergy, government officials, and the families and friends of victims. May we all forever remember that day. May we use the teachings of 9/11/01 to better this country and the world surrounding.

After reading Kathryn Stockett's The Help two years ago, I couldn't wait to see the film directed by an Ole Miss alum, Tate Taylor. I was lucky enough to go opening weekend with my sweet aunt, JBN. We got two of the last four seats in the whole theater. The film was well adapted from the novel. I loved Minny; she was best played character. We giggled, gasped, and wept. We even recognized some of the extras. It is a beautifully made movie. Read the book...then go see the film.

Labor Day

- We celebrated JBN's birthday. Burgers and Rotel. Chocolate cake.

- Snuggled with a sweet angel. He's grown so much in just two weeks!

- Groved.

- WCM tried his very best to cheer the Rebels onto victory.

- I got a cold. And Boofy got a bone!

- Spent time with NAN at Boure. Blue cheese and fried pickles on my second burger of the weekend. No biggie. It was a holiday after-all. Boofy spent time with her favorite hound and original boyfriend, Bruiser.

- Today we celebrated the end of two full days rain and cooler breeze with pecan pumpkin pancakes and a long walk.

Robert Morgan: Gap Creek

Robert Morgan penned Gap Creek: The Story of a Marriage personalizing the environment in which he grew up, the Appalachian mountain country. I would dare to say this novel is not the "story of a marriage" but rather the story of a woman. Julie Harmon emerges as the hero of Gap Creek. She is fierce, industrial, and naive. The inspiration of the novel lies in Julie's uncanny ability to walk through each of the many troubles in her young life. I enjoyed the book and look forward to reading another one of Robert Morgan's works.

Coffee Talk: VMA's 2011

Raise your hand if you made it through more than 5 minutes of the VMA's Sunday? I did. And I felt like I had been through a whirlwind.
Some thoughts:
1. Firstly, what on earth was GaGa doing? OK, shock factor character play, I get it. But after the first 2 minutes, it was played out.
2. Who is Tyler/Taylor the creator/entertainer? Slash...am I too old?
3. Beyonce is preg. She looked beautiful. But, who wants to announce a pregnancy on MTV?
4. Adele knocked it out of the park. Except, she needed a less pointy manicure. She should have won more. At least this was the VMA's and not the Grammy's.
5. Russel Brand needs a new stylist. He could be halfway handsome if he didn't wear plastic.
6. Britney looked like a deer in headlights the entire show. I have a hard time understanding her hair.
7. Who was the girl in the walking boot singing in a chair wearing a leotard?
8. Why wasn't there a host?
9. The Beebs cut his hair. And wore a red pant.
10. Lil Weezy came on strong to end the show. A little too strong.

A family that is ever-expanding; growing in love and number.

We celebrated a special birthday by surprise.
I was so nervous I was going to spill the beans.
And speaking of beans, it was Mexican-themed!
We made napkin flowers and a huge photo banner full of sweet memories.

I got to snuggle all the brand-new precious baby boys.

We have added three in the past six months.

It was a sweet,sweet time. I am grateful.

Curtis Sittenfeld: The Man of My Dreams

Young adulthood can be a trying time in finding the true self and applying that person, whomever he/she may be to life. I've always said after choosing a college your senior year of high school, there are a multitude choices and life paths during and immediately after college. For example: what major to choose, what career path to take, where to move, who to love, whether to party or study, how to spend or save. The combination of choices and changes assemble to create a personality and the compilation of character.
Curtis Sittenfeld (Prep and The American Wife) uses The Man of My Dreams to unfurl the oftentimes complex helix of young-adulthood. Hannah Gavener, the narrator and central character of the novel demonstrates the sequential interplay of her introspective and extra-personal reality. Hannah is a relatable, brave, and honest young woman. This is a great read.

Julie Hect: The Unprofessionals

I picked this book up at my local library just out of curiosity. Sometimes I am really lucky when I choose random novels to read. This time, however, my luck was dysfunctional. This novel read more like a collection of repetitive short stories. There was no flow or direction. It lacked excitement and left me feeling downtrodden. Definite skip. Next up: Gap Creek by Robert Morgan.

OK. I give up. I tried my best to give up coffee. Can't do it. I feel so silly talking about reality TV and celebrity gossip. But, it is my guilty pleasure. So, after an eight month hiatus, here it is.

1. Giuliana and Bill. I love them. I want to be friends with them. I think they're so cute and fun. I want them to have a precious baby. I think it would help jump-start their fertility if G would eat a cheeseburger....with a milkshake.

2. Bachelorette. I can't like JP. I tried. I didn't watch the whole season, but mainly caught it at the end. I felt like he was a little rough. Pretty ring, though. And poor, sweet Ben down on one knee proposing. Bless him. PS: I will not watch Bachelor Pad.

3. Hilary Duff is preg. Kate Hudson and her fiance, Matt Bellamy had a beautiful boy, Bingham. Jessica Alba and Cash Warren had another girl, Haven. Tina Fey also had girl number two, Penelope. You know she's gonna be funny. Did anyone see how beautiful The Beckham's baby girl, Harper is? Yes, please, Daddy Beckham.

4. SYTYCD. Called it. INcredible, Melanie.

5. Real Housewives. Taylor and ole-boy got divorced. Knew that was coming.Teresa and Melissa cannot/will not get along. And Teresa is allegedly trying for #5. Ashley is so unrealistic. Caroline is my fave. And BTW, RHoNY, I had enough by the end of Part II of the reunion.

1. Hulu. I have no cable until the end of the month. The man at the library told me "reading is better anyway." I am watching show after show on Hulu. It's free and easy to use. If you're cable-less or stuck in an airport it is a definite good thing.

Greg Isles: Third Degree

In Third Degree, Greg Isles again demonstrates his knack for suspense. In reading his works, one never comes to a "stopping-point." Third Degree is an adeptly written novel detailing an intimate series of betrayals among the characters occurring over one afternoon. In comparison with the intensity of the meat of the book, the conclusion is somewhat anticlimactic and almost predictable. However, it is still a great, quick read.

In these last few weeks of true summer, we have got to enjoy peaches, tomatoes, and watermelon. Nothing better than a homegrown tomato. I digress. Noodle made this salad for my birthday dinner. Everyone enjoyed it!

Watermelon Salad:
- feta cheese
- thinly sliced red onion
- diced fresh watermelon
- spring greens or arugula

Dressing:
- apple cider or sherry vinegar
- olive oil
- kosher salt
- dijon mustard
- fresh cracked black pepper
- crushed garlic clove

This is an eyeball recipe. Mix and enjoy!

More birthday/Dallas fun! We had a pool party Saturday complete with cold beer and hot dogs. Legit. Then we made a cake with almond buttercream icing. Tasty. Noodle made a watermelon and feta salad. Recipe to come. We had cowboy bone-in ribeyes. Meaty. Then we played spades. Naturally, I won (played a Nil, too.) It was an excellent birthday! Thank you, again to Noodle (sister) and KAK!

Greek Salsa Chicken

Yet another delish recipe shared with me courtesy of LMW. The chicken is crisp and full of lemon flavor. The light and fresh salsa is a perfect compliment. It is a great summertime supper!

Salsa:
4 oz. crumbled feta cheese (maybe more?)
1 cup halved grape tomatoes
1/4 cup pitted kalamata olives (I would pit then dice olives)
1/4 cup minced fresh parsley
1/4 cup fresh lemon juice
1/4 cup extra-virgin olive oil
1 T dried oregano
Combine ingredients in medium sized bowl. Cover and chill. I would double this and add cucumber for leftovers over orzo or bow-tie pasta.
Chicken:
6 skinless, bone-in chicken breasts
kosher salt
fresh ground pepper
2 T extra-virgin olive oil
2 lemons, cut into wedges
Preheat oven to 450 degrees. Season chicken with salt and pepper. Saute chicken in olive oil until browned on both sides. Place chicken in a roasting pan. Squeeze lemon wedges over chicken then place among chicken in pan. Roast chicken about 30 minutes. Serve topped with salsa. Great with roasted new potatoes and green salad.

Mal and I went to see Bridesmaids last week. I have not laughed that hard in a long time! Absolutely the funniest movie of the summer. Kristen Wiig is phenomenal. My second fave bridesmaid has to be Melissa McCarthy (she wanted to look like Guy Fieri...nailed it). Y'all have to see it. My face hurt leaving the theater.

Anita Shreve: Rescue

Traditionally, Anita Shreve has written books with a female narrator. Rescue, her newest novel, is written from Peter Webster's perspective. Webster is a single parent raising a rebellious teenage daughter, Rowan.The novel begins rather slowly, but from midpoint on it becomes increasingly intriguing. However, in comparison to Shreve's previously adored works, Rescue unfortunately falls short of expectations.

I kept hearing about Bossypants. Admittedly, I bought it on a whim at the check-out at Homegoods (sucker!). I read it at Watercolor and loved every second of it. It was a hilarious and easily related quick read. Tina Fey is as funny in real life as she was on SNL. This is one book I probably would not read on a plane. You'll look silly laughing aloud every page.

Meatloaf

Pancetta-Wrapped Turkey Meatloaf:
Giada de Laurentiis
1/2 cup plain bread crumbs (store-bought or home-made)
1/4 cup chopped flat-leaf parsley
2 large eggs, lightly beaten
2 Tbsp whole milk (I'm sure whatever milk you have will work)
1/2 cup grated Romano cheese
1/4 cup sun-dried tomatoes, chopped (packed in oil for more flavor)
3/4 tsp salt
3/4 freshly ground black pepper
1 lb ground turkey
10 ounces sliced pancetta (10 slices)

Preheat oven to 375 degrees.
In a large bowl, stir together bread crumbs, parsley, eggs, milk, cheese, tomatoes, salt and pepper. Add turkey and gently stir to combine, being careful not to over-work the meat.
On a baking sheet lined with parchment paper, lay out pancetta overlapping slices to form a large rectangle shape. Place turkey mix in center of rectangle, shaping into loaf. Using the parchment, wrap pancetta around turkey loaf to cover completely then squeeze to secure. Bake in parchment about 45 minutes or until internal temperature reaches 165 degrees.

Notes: We ended up baking it closer to an hour (defrosted from the freezer). We also ended up unwrapping from the parchment for the last 15 minutes which crisps the pancetta.The meatloaf freezes beautifully. It also makes a killer leftover sammich when browned in skillet, topped with monterey jack cheese and fresh basil pesto on toasted bread. Thanks, LMW, for sharing!

Friday we trekked out in the pouring rain to the co-op farm to pick up this incredible basket full of goodies (thanks, LMW). It is amazing the variety they offer! Eggplant, okra, cukes, onions, garlic, potatoes, tomatoes, squash, peppers.

WJW decided to make this delicious dish using some of our fresh veggies (onions, peppers, garlic).

Seared Flank Steak:
1-2 lb piece flank steak
soy sauce
sliced garlic
salt and pepper
lime juice
lemon juice
worchestire sauce

Mix above ingredients in large ziploc bag. Chill and marinate in fridge for 2 hours.

3 peppers, sliced (any color or combination will do)
1 small onion, sliced
1 clove garlic, minced
salt and pepper
olive oil

Preheat grill
Sautee above ingredients over medium high heat until cooked but still crisp.
Remove flank steak from marinade and pat gently to remove excess. Sear on grill over high heat for 3-4 minutes a side. Remove from grill and let rest 3-5 minutes. Preheat broiler. Place steak in a casserole dish, cover with peppers, top with provolone cheese. Broil until cheese melts. We served over grits which I made with chicken broth, garlic, parmesan and cheddar cheeses, salt and pepper.

John Grisham: A Painted House

It's been quite some time since I read a John Grisham novel. I recently read A Painted House by Grisham and was pleasantly reminded of his talents. The book, said to be reminiscent of the author's childhood in a rural Arkansas, follows the swift upbringing of Luke Chandler. Through Luke's narration, we see the truth of life on a cotton farm. I enjoyed being reintroduced to Grisham and his well-rounded style of writing.

We have just returned from a lovely jaunt to Watercolor. What an incredible treat! WJW and I flew down on a whim and stayed a few days with LMW at Watercolor. LOVED all the houses. Ate some delicious fare. Enjoyed the beautiful beaches. Cruised around biking the trails. We definitely did not want to leave!

Corn Dip

3/4 cup sour cream
3/4 cup mayo
3 green onions, sliced
2 cans Mexicorn (canned food aisle), lightly drained

The story follows Larry Ott and Silas Jones as its protagonists weaving through years of history, gossip, judgment, loyalty, and betrayal. Ron Charles' review in the Washington Post proposes: "Franklin is a master of subtle withholding, revealing lines of culpability and sympathy in this small town one crooked letter at a time. Some sins are too late to atone for, but others aren't."

Although it seemed to take forever to get here, I loved every second of the Royal Wedding coverage. William and Kate seem to adore each other. I love that they each had input on the day and its details. I also felt they kept it true to themselves. Kate looked incredible! Absolutely loved her dress.

Pimento Cheese

Whenever I think of summer, I think of cold plates: chicken salad, home-grown tomatoes with cottage-cheese, pickles, and pimento cheese. Here's a great recipe:

Pimento Cheese:
1 8 oz block sharp cheddar, grated
1 8 oz blog sharp white cheddar, grated
3/4 cup mayonnaise
1 small jar pimentos, drained
1 TBS grated onion (microplane works best)
salt (or garlic salt) to taste
fresh cracked black pepper to taste

Combine all ingredients. Taste. If somethin' is missing...add it. Chill. Serve with crackers or on toast. Would also be great on top of a biggole burger.
